Vol.75:The amazing power of miso

Good morning.
We arrived at Rhodes island in Greece.
It’s been two weeks since I last came to Rhodes.

Today I plan to go to the beach to sunbathe.
Gradually the summer is coming.


Today let me talk about Miso.
Do you know miso?
Miso is Japanese traditional food.
This is fermented food.
Main ingredient is soy beans.

We use as a seasoning, food, main ingredient of soy soup(miso soup).
And it contains rich nutrition.
This is all round player for Japanese.
Essential food.

Even though I have left Japan for just two month, I already miss miso.
So I bought organic miso at Japanese food shop in Athen.

Immediately, I put miso on cucumber.
At the moment, I was so impressed of the taste.
I felt “What a tasty food is this!!”
I was about to cry. haha

And I gave miso to my colleague from Ukraine.
He was also so impressed to the taste.
According to him, miso is expensive food in his country,


As I ate miso, I really appreciate for that I’m Japanese.
Yes, this is Japanese taste.
Thanks our ancestor.
Thanks for inventing great food.

I have wanted to taste this traditional, complicated, deep taste.
This is the power of fermentation.

I think Japanese is good at making use of the power of fermentation.
For example, natto, Japanese pickle etc.

By fermentation, the food gets more great taste, nutrition.


As I ate miso, I supposed I want to let them know the fascination of Japanese food more.
